for absolutely delicious and healthy breakfast, Watercress offers hearty rustic fare in a charming and elegant space. Masterminded by owners Pablo Fourcard and Jordie Strybos from the Good Food Brotherhood, Watercress first opened its doors in 2012, and was the first outlet of the group. Clean and healthy eating was foremost on Pablo’s mind when he first set out to design the Watercress menu, which features lovely fresh ingredients and the best that the island has to offer. Now most of the menu creation falls on the shoulders of Executive Chef Justin Maute, but he still still strictly adheres to
the original ideals of Watercress. Watercress’ newly-renovated flagship outlet on Jalan Batu Belig occupies a lovely corner and is a delight to be in. Here guests can enjoy perfectly pulled flat whites with a nourishing bircher muesli bowl. Pablo recalls that back then, there was no where on the Island you could get a good Aussie-style breakfast. And that’s what they set out to do. The menu pays tribute to the local warungs, where a variety of options is always available – from perfectly poached eggs nestled on crisp corn fritters, overnight wobbly chia pudding with berry compote, roast vegetables and couscous salad to a hearty Angus beef burger.
