THE RESTAURANT is named after the Indonesian word for archipelago, a fitting name for the type of cuisine that they aim to promote. Nusantara takes its cues from big brother, Locavore, sourcing hyperlocal ingredients from trusted farms, making sure everything is endemic and sustainable. But their similarities end here. Dishes showcase the distinct tastes and flavors of regional Indonesian cuisine, not the typical dishes you would taste at other Indonesian restaurants. Balinese chef Putu Dodik Sumarjana and his sous chefs from West Java, Medan and North Sumatra are constantly coming up with new dishes to keep the menu fresh. This authentic Indonesian restaurant offers a unique version of the country’s rich culinary heritage. The menu focuses on traditional flavors from across the Indonesian archipelago, bringing authentic, less-known regional dishes to diners from around the world in a casual environment.
