Classic Japanese cuisine with a twist

LOCATED A FEW minutes away from Berawa Beach, Indigo offers chic contemporary Japanese cuisine, with a tinge of European influence. The key to the food at Indigo is fresh ingredients, which means fish is day-to-day delivered. The sushi and maki burst with an exciting variety of colors, flavors, and textures. On their menu, Indigo also serves a selection for those with adventurous palates, such as New Style Sashimi or the sublime Yakimono dishes cooked over charcoal grill. Innovative with a traditional approach, Chef Morita Shigehiko highlights the natural essence of the produce with a minimum of elements by extracting the ingredients flavors to its optimum. Chef Morita has worked for several restaurants, from Japanese
to Chinese, French to Italian cuisine to develop his cooking skills. His enthusiasm for fusion food came after he dined and later on worked at Il Ghiottone, a restaurant led by Chef Yasuhiro Sasajima the pioneer of Kyoto-Italian food. Staying true to its concept, the interior of Indigo is a blend of Japanese architecture, Balinese material, and French savoir-faire, giving patrons a sense of zen and details of Japan through the earth tones, indigo dye fabrics, and exposed red brick walls. Adorned by traditional shibori patchwork ceiling created by a local artist, original Shoji inspired glass doors, and serene indigo colour on denim cushions make up the minimalist yet refined decor that gives a harmonious and homey atmosphere.
