BEHIND CUCA IS Michelin-trained Chef Kevin Cherkas from Canada who has an enviable track record, including a stint with Daniel Boulud at his highly regarded Michelin three-star Daniel. Launched in Jimbaran, Bali in 2013, Cuca specialises in artisanal tapas, cocktails, and desserts, house-made with western cooking techniques. Chef Kevin’s innovative dishes use ingredients carefully selected and sourced exclusively from Indonesia to maximize freshness, support local farmers and growers, and showcase the uniqueness of local produce. Cuca’s signature concept is super casual meets fine-dining experience with their unique dishes and chef tasting meal served in small portions as they are meant to be shared. Some of the highlights of their menu are its BBQ Octopus, which was inspired by Chef Kevin’s Greek grandmother. The dish features octopus from Jimbaran Bay served with fresh apple, caramelised cauliflower, and coriander. Its Bali Breakfast is a dessert plated resembling sunny side up - with sweet runny mango and whipped coconut, while underneath is a layer of passion fruit. The space boasts three spaces to experience - an interacting food bar, which is next to the kitchen, a relaxed yet intimate spacious dining room, and a chilled outdoor garden lounge and cocktail bar perfect for a windy afternoon. The exciting spot would be the long table by the food bar as guests can enjoy watching Chef Kevin in action inside the open kitchen.
