Cantonese cuisine reaches new heights

LOCATED ON the top floors of the Alila SCBD hotel, Hakkasan Jakarta opened a few months ago to loud aplomb. At the helm of the kitchen is Chef de Cuisine Sky Wong Kum Choy, who brings a wealth of experience in preparing creative Cantonese cuisine. Chef Sky presents Hakkasan’s authentic Cantonese cuisine and signature dishes including those which were inspired by and created with local produce and designed exclusively for Jakarta.
Some of the most popular mains from Hakkasan’s classic menu include the Jasmine Tea Smoked Beef Ribs, which plates marinated wagyu beef ribs smoked with jasmine tea with a classic presentation. Another classic favorite is Champagne Roasted Silver Cod, has been modified to suit the
taste the Indonesian clientele – the newly revamped dish now emphasizes a cleaner, more confident mouth feel focusing on the essential flavors of the produce. Some only in Jakarta dishes include the Quail Egg Puff - whole quail eggs are cooked to perfection, wrapped in masterfully crafted puff pastry. The eggs are cut in half at the table, allowing you to see the runny yolk oozing out. Another signature must-try is the Supreme Dim Sum Platter. Offering eight pieces of lustrous dim sum in perfect bite sizes, the platter is designed to be shared and features local premium product packed and designed to be enjoyed in one bite. These include lobster and crab dumpling, truffle hagau, seabass dumpling, and the classic scallop shumai with tobiko caviar on top.
