IJEN IS Potato Head’s first zero waste restaurant. Ijen serves fresh seafood, which is guided by the daily sustainable catch and cooked over an open fire in a spacious environment built from recycled materials. Everything in Ijen is sourced locally, all produce is from the island of Bali using small production farms, naturally grown and free of pesticides. Fishing nets are a huge source of ocean plastic and they try to avoid contributing to this industry by using primarily line caught fish. A big part of being a sustainable restaurant is by reducing your carbon footprint in the world, which means no imported ingredients here. For the locally produced ingredients, they started educating their vendors to never use single use plastic in their deliveries, Potato Head would rather invest in reusable crates which can be exchanged, and encourage them to use banana leaves to wrap te produce.
